Beef or Venison Tacos

Ingredients For Beef or Venison Tacos:

  • 300g minced beef
  • 150g black beans
  • 1 onion (finely diced)
  • 2g Essential Mexican seasoning 
  • 5g paprika
  • 5g oregano
  • 75g tomato puree
  • 150ml chicken stock
  • 1 pepper (diced)
  • 1 avocado (diced)
  • 1 tomato (diced)
  • Bunch of coriander
  • Olive oil
  • 10 soft shell tacos
  • 1 lime

Method:

Step 1: Start by colouring the mince beef in a frying pan on a medium heat with a little splash of olive oil until the mince has separated and has coloured. Add the diced onion, herbs and spices turning down the heat slightly and stirring occasionally.  Ensure the spices have started to cook out to allow their natural aromas to come through.

Step 2: Next add the tomato puree and stir through the mince. Once incorporated add the chicken stock, stir and allow to gently simmer from approx. 10 minutes. Add the black beans and allow the mix to cook through until it thickens and becomes glossy and rich which should take a further 8-10 minutes. Remember not to cook for too long so the mixture becomes dry. Remove from the heat and set to one side for later.

Step 3: In a separate bowl add the peppers, tomatoes and avocado and mix through with chopped coriander, olive oil and the juice from half a lime.

Step 4: Gently warm the soft shell tacos. This can be done with under a grill or through an oven. Once you have warm taco shells lay them on a plate and build the tacos with spoonful’s of the black bean taco mix and salsa.  

Step 5: Fold the tacos in half and serve immediately. Squeeze extra lime juice on top if desired. These delicious tacos are best enjoyed fresh and hot!
