Delicious Coronation Tofu Tacos with Fresh Mango Salsa!

These tacos are a delightful mix of crispy tofu in a rich, spiced sauce, topped with a refreshing and sweet mango salsa.   • 200g extra firm Tofu (diced)
  • ½ onion
  • 25g curry powder (Mild)
  • ½ tsp of cinnamon
  • ½ teaspoon of garlic powder
  • 200g Mango
  • Coriander
  • Lime
  • 3 tbsp of mayonnaise
  • Pinch of sultanas
  • Olive oil
  • 8 taco shells or soft shell tacos

(makes four portions or 8 tacos)

How To Make Coronation Tofu Tacos?

Start by finely dicing half an onion and adding to a pan with a little olive oil. Cook these gently on a low heat with no colour until the onion has started to soften and their natural sweetness comes through. 

Next up, add all the spices and continue to cook on a low heat until the spices aromas come through. Add a splash of water so that the onions and spices form a paste.

Add the mayonnaise and spice mixture to a food processor and blend until smooth creating a fragrant curried mayonnaise.  

Next, add a little olive oil to a frying pan on a medium heat and add the diced tofu. Colour these slightly until golden. You can also add a little sprinkle of extra curry powder if you really want that curry flavour to come through.

Once the tofu is coloured, add them to the mayonnaise along with the sultanas and mix through to create your coronation mix. You will notice there is no measurement for the sultanas as this all depends on how fruity you like the coronation mixture.

Now its time to start on the mango salsa. Start by dicing the mango. This doesn’t have to be perfect! Add a little chopped coriander and a splash of lime to finish.

If this recipe is not being used for children try adding a little diced red chili or some diced red onion for some added flavour and texture.

Now its time to build your tacos. Gently warm the soft shell tacos first either in a pan or through a oven for a minute. Add a generous tablespoon of the tofu coriander mix on to the taco shell and then top with salsa. Sprinkle a little fresh or desiccated coconut and enjoy!
