Happy cooking!
Ingredients
- ¼ Watermelon (small) or approx… 1kg
- 1 block of halloumi 1cm dice
- ½ cucumber
- 2 sprigs of mint
- ¼ lemon
- 1 tbsp. of honey
- 1tsp olive oil
- 1 tsp of chia seeds
Let’s get cooking…
Start by peeling the watermelon. To do this you will need to slightly top and tail the melon so that it stands on a chopping board without rolling around. Then, following the curve of the watermelon, from top to bottom, use your knife to remove the rind of the melon (video on YouTube for follow-along). Continue this all the way around until the melon is peeled and free from any white rind. Cut your watermelon into lots of different shapes! This is a great activity for cooking with children!
Next up peel ribbons from the cucumber using a speed peeler when you reach the seeds in the middle, turn and repeat this all around the cucumber.
In a small bowl incorporate the honey, chia seeds, lemon, and olive oil and mix until a sweet tangy dressing has formed. Set aside for later use.
Start by arranging the Melon and cucumber on a dish standing certain pieces up for height and layering the cucumber ribbons between the melon pieces. Then in a medium-heat pan add your diced halloumi with a little olive oil and gently colour the halloumi until golden and soft. Once your halloumi has reached the desired colour and consistency, place around and on top of the cucumber and melon.
To finish dress the ingredients with the dressing you made early using a spoon to drizzle. Serve by sprinkling small mint leaves on top of tearing slightly larger ones
