These Bunny Salad Cups are not only adorable but also packed with wholesome goodness! Here’s what you’ll need:

Ingredients:

  • Large lettuce leaves (such as romaine or butter lettuce)
  • Assorted salad ingredients (e.g., cherry tomatoes, cucumber slices, shredded carrots)
  • Cooked quinoa or brown rice
  • Cooked chicken or tofu, diced
  • Olive oil and lemon juice for dressing

Instructions:

  1. Wash and dry the lettuce leaves, then lay them flat on a plate.
  2. In a bowl, mix together the salad ingredients, including the cooked quinoa or brown rice and diced chicken or tofu.
  3. Divide the salad mixture among the lettuce leaves, shaping them into cute bunny-shaped cups.
  4. Drizzle with a light dressing made from olive oil and lemon juice, and serve up these delightful Bunny Salad Cups!

Carrot Cake Oatmeal Cookies:


Who says you can’t enjoy cookies during Easter without all the added sugar? These Carrot Cake Oatmeal Cookies are a hit with kids and allergy-friendly too!

Ingredients:

  • 2 ripe bananas, mashed
  • 1 cup rolled oats
  • 1/2 cup grated carrots
  • 1/4 cup raisins
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the mashed bananas, rolled oats, grated carrots, raisins, cinnamon, and vanilla extract. Mix until well combined.
