Irish Stew Recipe

Serving suggestion: Great with crutsty bread

Ingredients

  • 800g stewing lamb
  • 5 onions
  • 5 carrots
  • 3 bay leaves
  • small bunch of thyme
  • 100g pearl barley
  • 850ml lamb stock
  • 6 medium potatoes
  • 3 spring onions
  • 400ml vegetable stock
  • 50g quinoa (well rinsed)
  • 1 tbsp sunflower oil

Method

1.) Prep – cut the stewing lamb into chunks, dice the onions, carrots and potatoes and slice the spring onions.

2.) Start by searing off the lamb chunks in a pan until they gain colour off and turn brown. Then drain the lamb and set to one side.

3.) In a thick bottomed pan fry off all of the vegetables and add the pearl barley and quinoa and stir.

4.) Then add the lamb back to the pan along with the vegetable stock and herbs.

5.) Transfer to a deep casserole dish covering with parchment paper and foil.

6.) Place in an oven at 180c for between 40-50 mins. To see whether your stew is ready, the lamb should be soft and tender, the liquid should be slighlty thickened aand shiny and the vegetables and barley should be soft and tender.

7.) Serve with some crusty bread and enjoy!
