Jenny’s Sweet Potato Curry

  • ½ red onion
  • 2 x tbsp. oil
  • 400g diced tomatoes
  • 3 x garlic cloves
  • 1.5 tbsp garam masala
  • 1 x tsp curry powder
  • ¾ tsp paprika
  • ¼ tsp cumin
  • 1 x cup chickpeas
  • 450g sweet potatoes
  • 383g can coconut milk
  • Juice 1 lime
  • 3 cups spinach

How to Make Jenny’s Sweet Potato Curry:

  1. Heat oil in a pan and sauté the red onion and tomatoes until soft.
  2. Add the chickpeas, diced sweet potatoes, minced garlic, garam masala, curry powder, paprika, and cumin to the pan. Stir well to combine.
  3. Pour in the coconut milk and bring the mixture to a boil. Reduce the heat and simmer until the sweet potatoes are tender.
  4. Add the spinach and lime juice to the curry, allowing the spinach to wilt.
