Cheesy Pork and Apple Sausage Rolls

Get ready to make a batch of golden, flaky sausage rolls packed with tasty pork, melty cheddar, and a sweet apple twist. Perfect for lunchboxes, picnics, or a cosy weekend treat.

Ingredients:

  • 250g RSPCA Assured minced pork
  • 1 Granny Smith apple
  • 3 egg yolks
  • 300g puff pastry
  • A few sprigs of fresh thyme
  • 1 tsp fennel seeds
  • Flour for dusting

Method:

1. Preheat the oven to 160°C.
2. Prepare the filling: Dice the apple into small cubes and grate the cheddar. Mix them together with the minced pork and a sprinkle of thyme. Use your hands to combine everything evenly.
3. Roll out the pastry: Lightly dust your surface with flour and roll out the puff pastry until it’s about half a centimetre thick.
4. Assemble the rolls: Brush a thin layer of egg yolk along the inside of the pastry so that it sticks to the sausage filling Place the pork mixture about three inches down from the top edge of the pastry, shaping it into a thick sausage shape. Carefully roll the pastry over the filling, tucking it in tightly.
5. Add the finishing touches: Brush the outside of the pastry with egg yolk to give it a golden finish. Sprinkle fennel seeds over the top for extra flavour.
6. Cut and bake: Slice the pastry roll into smaller sausage rolls, around 3-4 inches each. Place them on a baking tray lined with greaseproof paper. Bake for 25 minutes until golden, flaky, and cooked through.
7. Cool and enjoy: Let the sausage rolls cool slightly before tucking in
