Cooking time: 40-50 minutes
Serving suggestion: Serve with chopped parsley and a sprinkle of parmesan. Swap the pork for mushroom for a tasty veggie alternative!

Ingredients:
- 30 ml olive oil
- 500g minced pork or chopped mushrooms
- 1 onion
- 1 carrot
- 1 red pepper
- 1 tsp dried oregano
- 225g orzo
- 500g chopped tomatoes
- 2 cloves garlic pureed
- bayleaf
- 1 courgette
- 1 tsp fresh parsley
- 2 tsp cheddar cheese
- 350ml of vegetable stock
Method
1.) Dice the onion, carrot, pepper and courgette
2.) In a thick bottom pan, add the olive oil on a high heat and add the pork, colouring until cooked through. Once cooked, drain the pork in a colander to remove the excess juices.
3.) In the same pan on a low heat add the onions, peppers, garlic, oregano and carrots and fry off. Once done add the pork back to the pan along with all the other ingredients with the exception of the parlsey and parmesan.
4.) Gently cook until all the liquid has been absorbed and the vegetables and orzo are tender. Don’t be afraid to add a little more vegetable stock if the liquid has been absorbed and the orzo and vegetables need a little more cooking
5.) Finish with chopped parsley, mixing through well. Garnish with the parmesan and serve
