Roasted Butternut Squash Gnocchi

Looking for a comforting family meal that’s packed with vegetables and ready in under an hour? This roasted butternut squash gnocchi is a wonderful way to introduce little ones to new flavours while keeping dinner wholesome, creamy, and satisfying. The naturally sweet squash creates a silky sauce that coats soft potato gnocchi, with kale and peppers adding extra goodness.

Serves 4

Ingredients

  • 400g potato gnocchi
  • 350g diced butternut squash
  • 1 large red onion, thinly sliced
  • 250g kale, washed and roughly chopped
  • 300g mixed red and green peppers, diced
  • 250ml plant-based cream
  • 1 litre water
  • 2 tbsp vegan vegetable stock powder (or according to pack instructions)
  • 1 tsp dried sage (or a handful of fresh sage leaves, finely chopped)
  • A little oil for cooking

Method

1. Roast the squash

Preheat your oven to 200°C (180°C fan). Spread the butternut squash on a baking tray, drizzle lightly with oil, and roast for 25–30 minutes until soft and lightly golden.

2. Make the creamy sauce

Add the roasted squash, plant-based cream, water, and vegetable stock to a large saucepan. Blend until smooth and creamy. Place over a low heat and allow it to warm through gently.

3. Cook the vegetables

While the sauce is heating, fry the sliced red onion in a little oil for 5–6 minutes until softened. Add the diced peppers and cook for a further 3–4 minutes.

4. Add the kale

Stir the chopped kale into the onion and pepper mixture and cook until wilted, around 2–3 minutes.

5. Cook the gnocchi

Bring a pan of water to the boil and cook the gnocchi according to the packet instructions. Once the gnocchi float to the surface, they are ready. Drain well.

6. Bring everything together

Add the cooked vegetables and gnocchi to the creamy squash sauce. Stir gently until everything is coated. If the sauce is too thick, add a splash of water until you reach your preferred consistency.

7. Finish with sage

Fold through the sage just before serving for a lovely aromatic finish.

Top Tip for Parents

For younger children, blend a small portion of the kale into the sauce before combining everything. It’s a great way to add extra greens while keeping the texture smooth and familiar.
