Venison Orzo Bake

Ingredients for the Venison Orzo Bake:

  • 300g of minced venison
  • 1 onion (Diced)
  • 1 red pepper diced
  • 1 small courgettes diced
  • ½ clove of garlic mashed
  • 600g chopped tomatoes
  • 500ml chicken stock
  • 150g orzo
  • Olive oil for cooking
  • Mixed herbs
  • 1 Mozzarella ball


Step One: Pre-heat oven to 180c

Step Two: Start by drizzling a little olive oil into a medium sized thick bottomed pan. Once the pan is heated to the desired temperature, add the venison and cook until the meat is thoroughly browned and broken up. Place into a bowl and reserve for later

Step Three: In the same pan, subsequently turn the heat down to low and add a little more olive oil, then begin to cook the onions and garlic gently without color.

Step Four: Next up add the diced red pepper and courgettes and continue cooking on a low heat for a few more minutes until they have started to soften.

Step Five: Add the venison you reserved to one side earlier to the vegetable mix in the pan and cover with the chopped tomatoes. Stir and cook on a low heat for around 10 minutes stirring occasionally.

Step Six: Sprinkle the orzo over the venison ragu mix in the pan and add the chicken stock.Ensure you combine all the ingredients thoroughly. Cover the pan with a lid or greaseproof paper and continue cooking for another 10 minutes, maintaining a low heat to gently simmer the mixture. Stir occasionally to prevent the orzo from sticking to the bottom of the pan. Cook until the orzo is tender but not mushy.

Step Seven: Place the orzo and venison mixture into a dish, thereafter sprinkle torn buffalo Mozzarella over the top. Bake in the oven at 180c for approx. 10 minutes or until golden brown.
